All our poultry live in our paddocks – protected from predators by Chief our trusted Maremma. While intensive factory farming producers grow a Size 18 chicken in less than 6 weeks, it takes us a full 12-16 weeks to grow our chickens. The chickens can do whatever they want, when they want during the day. We generally only lock them up at night for their own protection. This means our chickens are genuine ‘pasture-raised’ chickens as they can eat grass and roots and forage for bugs, worms, larvae and more. We also have at hand feed pellet for additional nutrition and proteins which allows for a healthy balanced diet essential in growing healthy, fully-feathered chickens with thicker skins and darker, stronger-flavoured meat.
We believe because they are paddock raised they develop quite differently with much more muscle in the legs from roaming around. There’s no doubting you can taste the difference. Pastured chicken is much less watery, not quite as soft and has a distinctly earthier and more gamey flavour. If you cook it a bit slower you’ll release all the natural flavour. We currently run @500-1000 (depending on the time of year and the season) laying Isa Brown hens and up to 50 Cobb meat birds together in an area of about 40 acres rotational grazing them after our dorper sheep herd under the watchful eye of Chief.
